Greek style dim sum

You might be wondering what a greek style dim sum is... Well, it's my take on a traditional Greek Tiropita and Spanakopita (cheese and spinach pie) simply shaping the phyllo pastry into a dim sum shape (I live in Asia after all)! I also used different ingredients to a traditional Greek cheese & spinach pie, and swapped spinach for my new favorite superfood: Kale. Now that I think of it,  the only greek ingredient that remains in this recipe is the feta!!!

It's a super simple, quick and delicious recipe and it makes a perfect light bite when entertaining at home.

Ingredients:
1 cup of chickpeas
100g Feta cheese
100g (approx.) Kale
Olive oil
A dash off freshly squeezed lemon juice
Salt/ Pepper
Phyllo pastry

Preparation:
*Pre-heat the oven a 200 degrees Celsius
*Drain and rinse the chickpeas and place in an electric mixer
*In a pan, lightly cook the kale adding a little water to it
*Add the cooked kale and feta cheese to the chickpeas
*Sprinkle a dash of lemon juice and mix
*Add salt and pepper together with some olive oil until reached the desired consistency and mix again
*Add a teaspoon of mixture to your phyllo sheet and shape as preferred
*Butter the finished phyllo dim sum and place in the oven until golden and crunchy
*Garnish with a watermelon, feta and mint salad for a touch of freshness

Enjoy!
