Brunch is one of my favorite pastimes during the weekends.
I usually like exploring different restaurants for brunch but I also enjoy preparing my favorite brunch dish at home... Eggs Benedict!
Ingredients (4 eggs benedict) :
2 English muffins (cut in half)
4 Eggs
6 slices of bacon or Parma ham
2 spoons of vinegar (added to the water to boil the eggs)
Hollandaise sauce (quantity as desired)
Spinach leaves
Chives
Salt & Pepper
1- Pan fry the bacon strips till crunchy as desired - (If using Parma ham do not cook but use fresh)
2- Toast the muffins till golden brown
3- Add the eggs 1 at a time in boiling water in which you have previously added 2 spoons of vinegar to (to keep the eggs from spreading in the water I dip them in with a ladle - as show in the 3rd picture below)
4- On each muffin lay 1.5 stips of bacon, some fresh spinach leaves, the poached egg, a spoon of hollandaise sauce, sprinkle some chives and add salt and pepper as desired.

ReplyDeleteYou can find Hollandaise sauce in any supermarket or you can make it yourself as it is not a hard recipe to make :)
